Ingredients

Pancakes
  • 1 cup gluten-free plain flour 
  • 2 scoops Mister Jones Vanilla Protein Powder 
  • 1 cup unsweetened almond milk (or milk of choice) 
  • 1 tsp organic ground cinnamon 
  • 1 organic egg
  • 1 tbsp pure maple syrup
  • 1 tablespoons coconut oil, or organic butter if not dairy-free (for cooking)
Toppings
  • 1 banana, sliced
  • ¼ cup toasted walnuts, crushed
  • 2 tbsp pure maple syrup

Method

  1. Mix dry ingredients: gluten-free flour, baking powder, protein powder, and cinnamon together in a medium mixing bowl.
  2. Add the milk, maple syrup, egg, and whisk together until a smooth batter forms. Let the batter rest for 5 minutes. 
  3. Heat a large nonstick frying pan over medium-high heat, and add the coconut oil or butter. 
  4. Once coconut oil or butter has melted, add ¼ cup of batter at a time onto the skillet, and repeat until 4 pancakes form. Cook until the edges look set and bubbles appear all over the surface of the pancake (approx 2 minutes).Flip the pancake and cook until golden brown (approx 2 minutes).
  5. Serve with sliced banana, maple syrup and crushed walnuts.
