Ingredients

Base
  • 1/2 cup walnuts
  • 1/3 cup almond meal
  • 3 tbsp coconut oil
  • 2 tbsp raw cacao
  • 1 tbsp pure maple syrup
Caramel Filling
  • 250ml coconut cream
  • 4 scoops Mister Jones Daily Beauty Protein - Salted Caramel 
  • 1 tbsp chia seeds
  • 2 tbsp coconut oil, melted 
  • Pinch of sea salt flakes 
Chocolate Topping
  • 1/4 cup raw cacao
  • 1 tbsp pure maple syrup
  • ½ cup coconut oil, melted 

Method

Cookie Dough Base:
  1. Combine all the ingredients in a large mixing bowl, and stir with a spatula until evenly combined.
  2. Add the almond milk one tablespoon at a time, mixing until the dough holds together but isn’t too sticky.
  3. Press firmly into the bottom of a loaf pan lined with baking paper.
  4. Place in the freezer to set.
Caramel Filling:
  1. Stir everything together until very smooth.
  2. Pour on top of the base and smooth to evenly cover.
  3. Place in the freezer for at least 2 hrs to set.
Chocolate Topping:
  1. Combine all ingredients in a small mixing bowl, and pour over the filling. Place the slice back into the freezer to set overnight.
  2. In the morning, take the slice out of the freezer and let it thaw for 10 minutes. Cut into 12-16 evenly sized bars.
  3. Enjoy immediately, or store in an airtight container in the freezer for up to 3 months.
