Ingredients

Crust
  • 1 ½ cups almond meal
  • 2 tablespoons buckwheat flour
  • 2 tbsp Mister Jones Unflavoured Bovine Collagen 
  • 3 medjool dates pitted
  • ¼ cup coconut oil, melted
  • 3 tbsp raw honey, or pure maple syrup
  • Pinch sea salt 
Cashew Coconut Cream
  • 1 cup desiccated coconut
  • 1 cup coconut cream
  • 2 tbsp raw honey, or pure maple syrup
  • 1 tsp pure vanilla extract
  • ½ tsp xanthan gum  
  • Juice ½ lemon
  • Pinch of sea salt
Beet & Raspberry Purée
  • 2 cups fresh or frozen raspberries
  • 2 small beets, raw, peeled and coarsely chopped or grated
  • 4 scoops Mister Jones Daily Beauty Berry 
  • ½  cup coconut cream
  • 4 medjool dates pitted
  • 2 tbsp raw honey, or pure maple syrup

  • ¼ cup pistachios chopped (optional)


Method

Crust
  1. Line a 28 x 13 cm baking tin with baking paper.
  2. Add all of the crust ingredients to your food processor, and pulse until the nuts are finely chopped.
  3. Transfer into the lined baking tin, and press the mixture down with your fingers. Place in the freezer.
Collagen Coconut Cream
  1. In a blender, combine all ingredients. Puree until smooth, and carefully pour over the crust. 
Beauty Raspberry Puree
  1. In a blender, combine all ingredients. Puree until smooth, and pour on top of the coconut cream filling.
  2. Place in the freezer to set overnight. The following day, allow the slice to reach room temp [approx 10-15 mins before slicing into and serving.
  3. Store in an airtight container in the freezer for up to 3 months.
