Ingredients

Base

3 medjool dates
1 ½ cups almond meal
1 tbsp coconut oil

Filling

1 cup shredded coconutĀ 
2 cups coconut cream
2 tsp Mister Jones Daily Beauty Greens
1/2 cup coconut oil, meltedĀ 
1/2 cup fresh lime juiceĀ 
1/2 cup pure maple syrup (or raw honey, if not vegan)

GarnishĀ 

Sliced lime
and coconut for garnish

Method

  1. Preheat your oven to 180C and grease and line a baking tray with baking paper, allowing it to spill over the sides so you can easily remove the slice once ready.
  2. For the base, blend dates, almond meal, and coconut oil [approx 15 secs]. PressĀ  mixture evenly into your lined tray and place in the oven for 20 mins, or until golden brown. Once cooked, allow to cool for at least 10 minutes.Ā 
  3. To make the filling add all ingredients to a blender and blend until smooth [approx 30 seconds]. Taste, and add more honey or maple syrupĀ  if you like it sweet.Ā 
  4. Pour mixture on top of base and smooth off the top with the back of a spoon.Ā 
  5. Place into the freezer and leave to set completely overnight.Ā 
  6. The next morning, remove from the tray and cut into 9-12 even pieces. Garnish with a small slice of lime and a sprinkle of coconut.Ā 
  7. Store in an airtight container for 7 days, or freeze up to 3 months.Ā
